- 1 large sweet potato
- 400 grams of chickpeas
- ½ cup of olive oil
- 1 avocado
- 1 teaspoon of garlic powder
- 1 teaspoon of smoked spinach
- 1 teaspoon of sesame seeds
- 120 grams of baby spinach(optional)
For the dressing:
- 1 teaspoon of organic Manuka honey
- 2 teaspoons of olive oil
- 1 tablespoon of balsamic vinegar
- 1teaspoon of dijon style mustard
Step 1: Add the sweet potato and chickpeas to a large baking sheet.
Step 2: Add some oil to it.
Step 3: Add the garlic powder, salt, and pepper onto it and toss to coat the sweet potato and chickpeas.
Step 4: Bake the ingredients and roast them at 200℃ for about 30 minutes approximately until the sweet potatoes are fork-tender.
Step 5: Peel the avocado and keep it aside.
Step 6: Add the organic Manuka honey, olive oil, balsamic vinegar, dijon style mustard in a bowl and whisk it together until properly mixed.
Step 7: Add the sweet potatoes, avocado, and chickpeas to another bowl.
Step 8: Add the baby spinach on top of it.
Step 9: Drizzle the dressing on top of the ingredients and toss it together.
Step 10: Sprinkle the sesame seeds and serve them fresh!
